As you walk down the hallway at Mountain View, Garden Spot Village’s Personal Care neighborhood, this time of year, chances are that you will smell something delicious coming from the kitchen. Residents prepared a Thanksgiving meal. Culinary Creations, a Mountain View micro-community, provides opportunities for Mountain View residents to get together to prepare and cook a meal with each other.
Everyone is assigned a job and everyone works as one to achieve their end goal of putting together the meal. During this preparation, residents share stories and enjoying being together. They especially enjoy getting to interact with the staff.
The preparation for the Thanksgiving meal consisted of peeling and cutting potatoes, cutting onions, and putting together the stuffing. The prepped food was set aside until they were ready to cook the meal the next day. Everyone who walked past could not help but express just how great it smelled.
A majority of the recipes used for the Thanksgiving celebration belong to Mountain View resident, Marty Waldrop. Marty’s favorite Thanksgiving memory was when all four of her daughters were home for Thanksgiving and each helped her to prepare the meal. She says that it is one she will never forget. Homemade Rolls
Ingredients:
1 package active dry yeast
½ cup warm water
¼ cup sugar
1 tablespoon oil or shortening
1 teaspoon salt
½ cup hot water
1 egg
3-3¼ cups flour
Soften yeast in warm water. In large mixing bowl, combine sugar, oil, salt, and hot water (stir to dissolve sugar) and cool to lukewarm. Stir in egg and yeast mixture. Add 2 cups flour and beat at least 2 minutes. Stir in remainder of flour. (The softer the dough, the lighter the rolls). Beat vigorously. Cover; let rise until double.
Stir down, cover tightly and refrigerate overnight. Turn out on floured surface. Place in greased muffin pans. Cover rolls and let rise until double. Bake 375° about 10 minutes. Brush tops with melted butter.
Sweet Potato Casserole
3 cups mashed sweet potatoes (16 ounce can)
½ cup melted margarine
1 cup sugar
1 teaspoon vanilla
2 eggs, beaten
Add 1/3 cup milk if sweet potatoes are dry.
Mix topping of:
1 cup brown sugar
½ cup flour
1/3 cup melted margarine
Chopped pecans
Put topping on sweet potato mixture and bake at 350° for 30-40 minutes or until heated through and topping is slightly brown.
Corn Bake
1 can (15 ounces) whole kernel corn (drained)
1 can (15 ounces) cream style corn
2 sticks margarine, melted
1 cup sour cream
2 eggs
1 tablespoon sugar (not optional)
1 box Jiffy corn mix
Mix together. Put in greased 9×13 pan. Bake at 350° for 30-40 minutes.
